corn (NOT FLOUR, please God not pasty, flavorless, flour tortillas…actually, I read earlier today that flour tortillas are consumed in Northern Mexico…) tortillas
While I was perusing various chorizo taco recipes (which is stupid in of itself considering I don’t need one as I am not cooking them anytime soon), I came across the above quote in ingredients.
As an avid consumer of both corn and flour tortillas, I find statements like this to be rather perplexing, as allegiance to one form of tortilla over another is ridiculous. It actually really irritates me – I know it boils down to some weird authenticity holier-than-thou superiority complex. And you know what? I spit on that, and I eat both tortillas. I’m no tortilla bigot.
That sounds like a New Mexican, rather than a Mexican, said that. But upon further inspection, is it with bigotry that I say that this “budget cook” lacks authenticity? RICK BAYLESS is the bane of Mexico. To “heart” him is hardly Aztec-justice. He actually says tamale wrong, just to be “authentic.”
I like Rick Bayless. You don’t have to be a certain nationality or race to be an expert in the cuisine.
Also, everyone knows that one shells one’s taco (or frankfurter) with whatever one’s heart desires.
Who said he was an expert?
I make green tortillas for St. Patrick’s Day. Double authentic!
PS That budget cook is a guy with a Polish last name who lives in Taiwan and eats Mexican food. He’s a small world after all.
All in all, I want to try his recipe out. I mean, at the end of the day, the taco is still a taco.
